Topic: which will make a decent SO shot (5 msgs / 107 lines)

I have 6 different beans and was wondering which one
would make a decent SO shot.  this is for a christmas
present.
1. timor
2. ethiopian sidamo (dry process)
3. colombian excelso
4. uganda organic bugisu
5. kenya gethumbwini
6. sumatra mandheling

Tuff choice since I think any of them could make a great shot.
I would go with the sumatra mandheling.

The Ethopian, Columbian, Ugandan, and Sumatran would be the easiest.  I
would go with the Uganda Bugisu myself.  That said, what I would really do
with that selection of beans is go 25% Sidamo for body and flavor, 25%
Uganda for complexity and finish, and 50% Sumatra to lower the acidity and
give it body with a great lingering finish.

I agree sounds like a good espresso blend potential. I'd maybe reduce
Sumatra to 35% and add 15% Kenya for some high end excitement:-) 
 
Also very very important roasting for espresso shots is adequate profile
time. This is where stock air roasters fall short. I'd roast it pre-blended
to touch of 2nd in a leisurely 15min Rosto profile, 5&1/2 to 6min start of
1st to end of roast. Also "stall" the roast at finish temp for 20 to 30
seconds. So actually not touch of 2nd but more 20 to 30 seconds into 2nd
WITHOUT roast temp increasing from that point. (FWIW same/similar type of
finish Stumptown uses on their Hairbender.)

i like the dry sidamo. might be a little bright as a straight shot at a 
lighter roast, but a slow semi-dark (not quite scuro) is great, makes an 
outstanding milk drink even on the lighter side.
