Homeroasters,
Has anyone roasted the Colombian Huila Palestina? How much rest is ideal
for this bean?

Kevin,
This is a really amenable bean. I found it to be delicious anywhere from
City - Full City (I thought it flattened at Full City+) over 1-7 days. I
think it was best at City+. There was lots of debate with friends, but for
me, 24 hours was my favorite - it had a strong carmely sweetness - but the
rich chocolate developed between 3-5 days. Seriously, it's hard to go wrong
with this bean and the sweet spot will depend on your taste.

Kris,
How great that you have friends nearby to have these discussions with!

Well, I am lucky I have great friends, but I don't know about "nearby". My
main coffee roasting pal is in Louisiana (I'm in Oregon). We've both got
iR2s, and we'll roast the same bean with the same profile, then he and his
wife on his end, and my husband and I on this end, will drink and discuss.
We have a shared online spreadsheet (one of the the benefits of Gmail!) that
we keep data and comments in as well (nerds!). I'm sure I'll find someone
in town to compare notes with eventually.
