Thanks for the tip about bread, I bake most of the bread we eat, and  
usually have a couple of loaves in the freezer. I am also cooking a  
large batch of beans today, will try the muffin trick with the  
beans.  The uses for this thing seem to be endless, I look forward to  
all of the adventures in vac sealin.
Do degassing beans break the seal in mason jars?  Will I have to re- 
vac beans the first couple of days?

Yup. You'll be on the computer, watching the tube or whatever and hear the
pop of the dome lid reversing from the kitchen cupboard in a day or two (or
wherever vac jar roasted beans stored.) FWIW the darker the roast the
greater the degass. Just re-vac. But doesn't "break the seal" per se' if
band screwed on tight. However, if the dome has been popped for some time
with tight band be careful opening! Once actually had beans spray out from
the built up pressure.
