Thanks to all who contributed to my water quality question.  The long 
scientific articled appealed to me since "science is my business".  The 
bottom line was "decent" city water run through a a PUR or Britta type 
filter is quite acceptable.  RO water, which I have access to, is not.   
At least I do not have to search for virgin glacier water.
Encouragement for those who are at the popper roasting stage. They 
really do the job if you are in a one or two drinker household.  As 
someone else noted, the SM sampler packets are just great to get the 
feel of home roasting.  Remember my previous hint in this regard:  A 
clean bamboo chopstick is a great tool to stir the beans around until 
they start to swell and the air from the popper can agitate the beans.
The recent comments on the Chemex brewer answered questions in advance 
of the arrival of a Chemex.
