I stumbled onto the House of Coffee Beans on Westheimer (they later
moved to University Village) in Houston long years ago. In addition
to coming to adore the proprietors, I worked through a lot of beans
with my Spong coffee mill which I foolishly gave away to my
continuing regret. I brewed with Chemex mostly with side adventures
with Toddy, ibrik, and a steam toy (please excuse my brashness using
a term probably indicating one of the cognoscenti). The ladies at
H.C.B. had a large ugly roaster named Madame Hasbean which always
seemed to be running giving out a delightful aroma. I never dreamed
of roasting my own at the time.
For sentimental reasons, I will probably haunt eBay for a while for a
Spong #2 mill.
