Mr. UPS man brought a fresh box from oakland today  can anyone recomend a
proper rest time for Monkey or any of the other espresso blends

I tend to roast Monkey just to the beginning of 2nd Crack (sometimes a hair
longer).  I like it best the day after roasting but it's surprisingly good
immediately after cooling too.  It's a VERY flexible blend.
We use it for Espresso, FP, Moka and drip...
