Funny, I actually used chickory before homeroasting, but haven't since. I
really like the flavor of chickory with coffee, though. I guess I just don't
want to mask all those flavors I worked so hard to create. Supposed to be
best with a good french roast,though, so at this point, there is usually not
much origin flavor left anyway. I'll get around to it some day. I've had
Caffe DuMonde, and I liked it alot (before I got into home roasting). It
will be interesting to discover what New Orleans coffee is SUPPOSED to taste
like (A.K.A.- NOT STALE!) By the way, both Chickory and Cinnamon have been
shown in studdies to modulate blood glucose levels, with the effect of
toning it down a bit. So might be a good consideration for diabetics having
trouble keeping blood glucose under control, or diabetics who like sugar in
their coffee. Just keep this in mind, though, when ingesting these compounds
after an insulin shot, so you don't become HYPOglycemic! Cheers!

I bought a pound from SM - make Cafe Au Laits for the wife and I...it was
pretty good.
 
I roasted some of the French Blend that SM sells past FC - almost oily but
not quite.  I am not a huge milk drinker so it was not something I will make
very often, but it was good for a change of pace.
