Brian,
The email below illustrates how complex roasting can get for people who are
really into it and have the handiness to use gadgetry to minutely control
the roasting time/temps:

I refuse to try to make a science out of something I enjoy so much as an
art. That said, putting some parameters around things keeps "the painting
on the canvas." Don't forget the enjoyment of roasting by getting caught u=
p
in watching too many instruments.

Mike,
I have a few instruments that I need, however I am not dependant on them.
First off is my timer. Second is knowing my valve settings on my heat
control, that were determined by using a K probe thermometer. I listen for
1st and 2nd crack. I have a peep hole to see the flame on my burner.
However just as you said, flying by instruments might get you to your
destination, but being able to look around and enjoy the journey is much
more fun. I love all the smells of roasting too!

That is what I enjoy about this list, diversity in the true sense. I
scoffed at Pecan Jim's roasting over fire and the HG/DB method. I then
sucked in my pride, and tried them. I learned some big lessons in roasting
doing those two methods. If you want to really experience all of the
variables at the same time, get an Androck Popcorn popper and roast over
fire. It is an amazing experience. One of the joys we have is to pop
popcorn over the fire with the Androck when we are camping. After enjoying
the popcorn, roast some coffee for breakfast the next morning.

Les,
I really like your statement. True diversity can be hinted at by populations
and other categories, but I think the most relevant diversity is in
behaviors.
