I've been trying out Tom's suggestions for blending, =http://www.sweetmarias.com/blending.html where the most varieties in =
any one blend he lists is three. I was really impressed with his =
suggestion of 25% Yemen and 75% Sulawesi Toroja, which he said was the =
best Mokha Java Blend. I roasted the beans separately(Yemen Mattari to =
FC+ and the Sulawesi to FC) and the mixed them. Tom as usual is correct! =
What a wonderful brewed coffee!

Alas, I've been stretching the tradition by just blending Sumatras
with DPs from Ethiopia. I end up with a superbly balanced coffee, as a
rule -- something that definitely elicits a palatal double-take from
folks. But I think you're striking far closer to the mark with that
blend there . . .
