The new grind adjustment ring has the two heavy (3X) fingers to engage the
slots in the bottom of the bean hopper. Evidently, some folks managed to
brute force the adjustment and snap off the original fingers when turning
the bean hopper to adjust the grind pitch.
If you kept track of the little detent ball, spring and sleeve from the
original grind adjustment ring, you're a good man, Charlie Brown! The two
fingers sticking up from the new grind adjustment ring are heavier, and
wouldn't engage the narrow slots in the original bean hopper. How did you
accommodate that? File the original slots or new hopper?
I'm unfamiliar with the shims of which you speak. Did you put shim washers
under the center burr? Lose them, then try grinding as before. If you did
remove the center burr, did you align the index pin on the slinger with the
index hole in the burr? If not, it would prevent the burr from bottoming on
its mandrel. A certain jam if you tried to grind that way. When you change
several factors at once, who knows what's causing the trouble?
Try backing out of the changes you made to see what's causing the problem.

Jamming is for Jazz combos, not grinders...
