Is it just me or has anyone else noticed that a good sharp cheddar 
cheese and good coffee, the tastes compliment each other very well?
Gnawing on a block of cheddar here and washed it down with a gulp of 
coffee, wow, I think im onto something here... now to figure out how to 
market backwash so the rest of the world can experience it too :)

When I was very young (elementary school age) my parents had to leave for
work before the school bus came, so I would stay with the neighbors. On cold
mornings, their mother would make hot chocolate and cheese toast (Kraft
American slice on a piece of white-bread toast). That flavor combo, as
pedestrian as it is, is still one of my favorite things (take it away, Julie
Andrews).
Kraft American w/hot chocolate isn't all that far from good cheddar and
coffee. It's just the kid's version, that's all.

I have a small brick of 4yr old cheddar I bought from an Amish dairy
near here.  Had some a coupe night ago - WOW.  Also good with grapes
or apple...

A word of caution to those with osteoporosis. Cheddar cheese is highly acid
forming. Avoid it, or eat alkaline foods (figs and raisins) to balance. Acid
forming foods increase calcium loss from the bones, alkaline foods put more
calcium into the bones.
Brett mentioned that cheddar is good with grapes or apple, both alkaline
foods. Notice how the body tells us how to eat if only we would listen.
I avoid cheddar due to my blood type diet. I now enjoy mozzarella with my
vegetable salads.

So does this mean that if I eat a few batteries from my flashlight when they die, the alkaline will offset and I can be like the energizer bunny and keep going, and going, and going?  or will it give me montezuma's revenge and Ill be on the pot... going, and going, and going??   Isn't cheese rather high in calcium anyways, so it'd pretty much neutral out any damage the acidity might cause?
Pretty much everything we eat is supposed to be bad for us in one way or 
another anyways it seems depending on which report you read and who's 
funding the grant to do this research..  I think Ill just eat a bit of 
everything and in the end it will all pretty much balance out.  If not I 
guess Ill die with a full belly and happy.
Coffee ...... HCl........ which acid do I want in my body today?  Ill 
just drink some lye and offset it all....

Alkaline forming foods are not necessarily alkaline in the form that we eat
them. It is the body's reaction to foods that is important. For example,
lemons are acidic, but the body digests the lemon and forms alkaline
substances. Meat and cheese seem neutral as is, but are digested to form
highly acid substances. When the diet is overly rich in acid forming foods
beyond the body's neutralizing capacity, calcium and magnesium are removed
from bone to neutralize the acid.
The calcium in milk and cheese may not be bioavailable depending on what
authority you choose to believe.
You are right to eat everything in moderation. But be aware that some foods
may be more harmful than others. Also, some foods are now much different
than before due to genetic modification, for example corn and soybeans.
People of different blood types may have to avoid foods containing lectins
that agglutinate their type's blood and tissue cells.

sources of iron with high-calcium dairy foods, the calcium keeps you  
from absorbing the iron and vice versa. (Creamed spinach may be  
yummy, but all you're getting out of it is fat, fiber, water and

"acid-forming foods" interfere with the absorption of calcium is just  
that: a theory and far from a universally-accepted one at that-- 
depends on what type of training and school of thought to which your  
particular health care practitioner may adhere. There are different  
calcium compounds as well (carbonate, gluconate, etc.) and all vary  
as to the form in which they are consumed (pills, capsules, foods)--- 
and vary widely with the individual.
