Whereas I adore the chocolate torte I have made in the past, I was 
wondering about something lighter (it only contains 1 lb of chocolate 
and a dozen eggs :P).  What comes to mind would be a nice fresh 
single origin Chocolate Moose.  Maybe a silky Panama.  With that, I 
could even do a double single origin Panama Mocha Moose since I have 
both cocoa and coffee from Panama.  For that matter, I could do a 
more robust African Moose (Ghana and Ethiopia), more maybe even a 
Mexican Mocha Moose.
Then again, Moose on a torte might be good too.
Or maybe moose filled centers for a more classic "popping" 
chocolate.  I adore cinnamon, but have yet to have a cinnamon 
chocolate I really adore.  I wonder about a cinnamon cream in a nice 
small truffle center.  hrmmm.  I will have to think it over.
