I put mine in a mason jar, pop the top every morning after letting them rest
the first night with the lid real loose. When it stops popping as I break
the seal it is perfect (at least for me) not sure how right or wrong that
is but it is what I started doing and it is working really well.

No right or wrong! It works well for you so it's right for you, I rest
coffee differently so it's wrong for me.

Very similar to what I do, except I wait 2-3 days before tightening the lid.
Then I do the pop test as you describe.

If this is coffee, please bring me some tea; but if this is tea, please
bring me some coffee.

What I found interesting was that I was sick for a week right after I did
some roasting. It had been in the jar with a tight lid and the bean I knew
took about 4 days of resting. After the first day I did not open the jar, I
was pretty sick :) a week later I open it and it did its gas release thing
and I figured since it had been a week it was rested. I guess since I did
not release the co2 it was not really rested, I brewed some and it was not
ready. I let it go a few more days of checking each morning and it was fine
in 3 days. Seemed that sealing tightly before a proper rest stopped the
resting process. It has been fine all week this week, strange. I just
thought I would bring that up and see what the great minds of this list
thought (not joking, I feel like the dunce in science after reading this
list for a while now)
