Topic: "Old Brown" straight up (4 msgs / 108 lines)

Since no longer really developing a PNWG V espresso blend decided to play a
bit with "Old Brown" Aged Java straight shots even though suggested use more
as a low note blender.
Initially thought low toned smoky coffee keep the shot temp down, so pulled
199f shot. Yuk, verging on sour quite sharp and plain weird tasting shot.
Down the sink. Pulled the next one 201f. While no hints of sour still a
pourly (poorly:-) balanced tasting shot that just had no "cup appeal" no
sweetness and down the sink most of it went.  But hey, this is a low toned
smoky bitey very aged coffee so what could I expect! Ok, lets really kick it
up. Pulled the next one 204f. Damn, not half bad at all! In fact not even
close to a sinker. Smoky silky deep not too "bitey intense" shot with even a
touch of sweetness. Thought need to try even another degree higher but since
tossed that shot back rather than down the sink enjoying it's linger too
much so next temp stage 205f shot will just have to wait:-)
Never really explored Age Indo' straight shots before, had only had Silvia a
short time when I first got "Old Brown" so really didn't have the skill set
needed, fascinating stuff and not just as a blender!

2) From: Tom & Maria - Sweet Maria's Coffee
I rejected a Java Old Brown recently - I mean, you have to have SOME 
positive quality to offset all that smokey bitterness in the cup. 
This one didn't. But I found an aged Sumatra I really like, so look 
for that in around a month. It isn't pretty (what aged coffee is?) 
but had a really nice, sweet aspect to offset the chocolate and 
cedar/hickory notes in the cup.

I stocked up on some Old Brown a year ago from another vendor. For
nonespresso use, I rank it second only to Yemen coffees. Also, if you store
Sulawesi Toraja for at least a year, it often develops some aged character.
In fact, I am drinking some "old" Sulawesi as I write this.
I am experimenting with a new drum roaster now and thought the Sulawesi was
too dark as it entered second crack by a few snaps. But after 5 days rest,
the unpleasant "dark" tastes are gone, and the cup is fantastic.

Played with "Old Brown" shots a bit more yesterday. Nope, 205f was too high
turning bitter, sinker. So pulled another at 204f like day before yesterday,
way better again! Was going to pull one at 203f (since had jumped from 201f
to 204f) but didn't have enough left roasted for another shot and won't be
roasting it again until PNWG V, which will also be it's farewell roast.
I'll also amend my previous statement saying I didn't explore Aged Indo' SO
shots when I first got this Aged Java. I did but the shots were terrible so
gave up on it, didn't know enough to know how to dial in shot temps back
then... Yeah Barry I know, just change to electronic temp control on the
Brewtus:-)
