Hi Ross,
To be honest I don't remember my exact Silvia surf' technique! And the =
last
year I had Silvia boiler was PIDed. Wait, I made a "cheat sheet" for =
Debi to
use and found it. For an average (IIRC "med-hot") brew temp drew water
through group 'til heater came on, waited 31 seconds and start pull. =
FWIW
these were specifically written for longer 4 to 5oz Café' Crema =
Americano
pulls (extra long lungo pull plus hot water) so had greater intrashot =
temp
drop. Didn't specify in the directions whether it would yield cool,
med-cool, medium, med-hot or hot shot temp 'cuz way more information =
than
Debi wanted. Merely what would work ok for her overall about any SO in =
the
event I wasn't home to make one for her:-)
Basically you can dial in your technique "by taste". If shot seems =
bitter,
shorter wait time from heater on to shot pull, if sour lengthen wait =
time. 
And yes, if only pulling a shot from idle versus steaming then dumping
copious steaming water through group to cool boiler the group will be =
about
~12f higher for the ensuing shot! Same for pulling series of shots no
steaming involved, group temp rises. I gave up trying to get repeatable =
temp
results in a shot series even with boiler PID. Actually bought rope =
heater
and second PID to stabilize group temp but ended up getting Bricoletta
instead. One of the big reasons I upgraded was for repeatable shot temps
whether from idle or entertaining hammerin' 'em out. Not having to mess =
with
boiler temp changes etc. for steaming was an added benefit but not
necessarily the primary and definitely not the only reason for =
upgrading:-)
When I had Silvia for the occasionaly cap' pulled the shot before =
steaming.
If making Debi and I a cap' would pull two doubles, sit 'em on top of =
Silvia
to stay sort of warm and die their crema death waiting for temp to come =
up
for steaming and steam milk for the both. But results that way were =
better
than steaming then trying to pull the shots.
Now of course if making a cappuccino just pull the shot and =
simultaneouly
steam the milk for it. If making more than one cap' immediately repeat
pulling another dead on temp shot and steam another 3oz milk...no shot =
or
steamed milk compromises. Miss Silvia was a great mistress for close to =
four
years, but I do not miss her!
If even remotely thinking of upgrading agree, don't spend the money on
PIDing Silvia, apply it towards upgrade instead. If very seldom steam =
could
keep Silvia and PID boiler and 2nd PID for group rope heater and add
pre-heated boiler incoming water for a great stable shot machine. Don't
forget to also add pre-infusion circuitry and of course tank auto-fill =
float
valve unless you pull the vibe pump and outboard a rotary pump direct
plumbed. Wait, that's Andy's Franken Silvia, and she does indeed rock =
for
shots! Personally though started towards that path, and would have been =
fun
to be sure, glad I came to my senses:-)
