I have learned through the latest literature that inflammation is the 
key factor in beginning the blood vessel problems. Inflammation is the 
body's response to assault whether traumatic, chemical, or biological. 
One source I am familiar with as a dentist is periodontal disease. It is 
estimated that over 75% of adults have some form of periodontal disease. 
It is an infection is the bone by a variety of gram negative bacteriae 
that significantly increase risk factors for heart disease, carotid 
artery plaques, and pancreatic cancer. Add diabetes to this and you have 
real problems.
The reason larger vessels are involved is because they are serviced by 
the lymphatic system. The inflammatory process results in scaring which 
causes narrowing of the vessels which causes turbulence in the blood 
flow. What happens when blood flow slows? Clot formation.
One disturbing trend is periodontal disease and diabetes in teens. This 
is a new phenomenon that is going to seriously stress the ability of any 
health care system

I don't think of deep frying as high temperature as it is usually done 
at 350F. And done with oils high mono and unsaturates, it can be 
considered healthy. Coffee roasting and pizza making. Now that is high 
temperature.
I would be more inclined to point the finger at trans fats and corn syrup.
