I got the same "coffeeless" effect when I roasted in poppers and even in my
non-perforated drum. There was no coffee aroma until much later after the
beans cooled. Judging roast progress by smell was useless to me.
A few months ago I returned to my original wiremesh drum and a different
rotisserie oven with bare nichrome coils as the heater. I have not made any
effort during the roast to observe changes in the aroma, but now I get a
great coffee aroma as soon as the hot beans are dumped. The taste results
are better than with all of my previous methods.
You may want to change roast method or profile until you do get better
aromas.
I have a theory that may explain my better results, but that will be for a
future message.

No pics. It does not matter since there is a new roaster on my drawing
board, similar to a conventional sample roaster. I really need to eliminate
the silly "remove drum to load and dump" routine. There may be pics of that
once it is built. But that timeline may run into next October, it is summer
fun time now.
