Did a bunch more shopping after closing the café. Just finished mixing =
up 4
gallons of my Mai Tai base and in the fridge, will add the White and =
Dark
rums to half of it Luau time! FWIW a simple mix of 2 gallons orange =
juice, 2
gallons pineapple juice, 1/2 gallon lime juice and 1 qt Orgeat (i.e. =
almond
syrup, used Torani). Tomorrow night the 3 pork butts go into a Hawiian =
brine
for a couple days. Then to be banana leaf wrapped Friday night and put =
on
the mesquite low & slow early Saturday morning... Probably make the =
haupia &
pinapple macadamia nut coconut rum up-side-down cake Thursday night.
Probably pre-blanch the 5# fresh sugar peas picked up today Thursday too =
so
just need the quick stir-frying Saturday for the sesame ginger sugar pea
dish. Won't have any prep time Friday! Tomorrow after closing still need =
to
swing by the Asian market for the Okinawa Purple Sweet 'taters, some =
more
coconut milk, some raw dried coconut (for dusting the haupia and for the
fresh pineapple/Tuscan cantelope/oranges/Asian pear fruit salad.) And =
and
and still needs to be done too!!! (and love doing it:-)
Unfortunately with café duties and luau prep etc. the Bric' is still =
only
limping functional and highly likely will still be that way Saturday. On =
the
bright side got both hard as bricks group gaskets chiseled out and =
replaced
on the LSM at the café today. So nice not to have to lock the PFs with =
all
my might using both hands anymore!!! Amazing you can actually "Move" a
goodly size commercial two group locking the PF that way:-)
BTW, there's a duty tax on that single malt scotch to the hosts. No not =
me,
but Debi gets a taste! But I will inhale of it deeply, love Scotch but
surrendered that right many moons ago...

I'll leave the LSM group gaskets at home.  Sure makes a machine feel
like a new - It always seems like your can immediately taste the
difference (sort of like how nice a newly washed car drives).
Your Mai Tai mix reminds me of the duty water cooler mix at a snake
ranch that several other sailors and myself had in New London Ct. back
in the 60's.  The only difference: delete the Orgeat/almond syrup, add
a gallon of 'Akadama' plum wine and a gallon of a good Russian vodka.
A little 'tasting' by five sailors and their girl friends left a
perfect 5 gallons in the water cooler for the evenings party.  Made
for an interesting afternoon waiting for the party.
