I taped mine in place with Kapton tape.  I stir clockwise, so I place it
also with a clockwise lead-in to the bottom of the bowl so the whisk does
not catch on it.  I bent it up slightly at the end so it was not too near
the bowl.
My probe is a flexible 1mm diameter sheath.

I use an IR gun that is +/- 5F, Of course having the third arm =
available helps (HG stand)

I have often considered using an IR thermometer in the "DB" of the HG/DB.
