Topic: Ethiopia MC Decaf - Dry-Process Sidamo (2 msgs / 25 lines)
1) From: Edward Bourgeois
Just roasted up a pound of this decaf. Tom had mentioned in his
description "Roast: City+ to Full City+: works best as a lighter
roast for brewed coffee. Note that this coffee seems to roast rather
quickly, and seems to pass from 1st to 2nd crack more rapidly than
other decaf lots. Why? I dunno. It's great decaf, period" So I started
it slow then ramped up to hit first at 9:45 then kept heat up for
about a min. then slowed down about 412 bean temp. went 3mins to about
430 bean t. looked in my pot and saw some very shiny beans.
Immediately dumped batch and cooled. Never heard a 2nd crack, bean temp
was not high enough to hit second, beans are not nearly dark
enough(considering they are a decaf) to have hit a shiny point. They
are very shiny but its not really oily but more like a sugar glaze.
Light enough so I can still see the tiger stripes. They are a beautiful
sight. But what is it with these beans or me? Can't wait to try. Ed
