Nancy, I certainly can't offer any specific advice for the IR2, but don't
try to operate any roaster as a Set it and Forget it pushbutton machine.
It's a little like toasting bread, except that the flavor of the "toast" can
be massively affected by the toasting technique. You really have to Wet
Nurse the things.
Spend a few minutes and get it Your Way, rather than FourBucks for some
employee's way.
