I roasted 1lb of the Blue Quetzal Bourbon on Saturday using Les's Cinnamon
roast profile translated over to the Gene Cafe.  I brewed up a pot of it in
the Moccamaster CD with a SwissGold filter.  I wasn't sure how Les Cinnamon
RK Drum profile would work on a Gene Cafe.  All I can say is this is
wonderful coffee.  It has a nice brightness with obvious raisin and grape
notes (the grape really comes out as the cup cools) with a subtle chocolate
undertone.  Conclusion, Les's Cinnamon roast can be performed on a Guat
using the Gene Cafe roaster resulting in a great cup.  I will definitely use
his profile again for a central.  The first time I roasted the Blue Quetzal
using my standard profile the cup was good but it didn't have the same
'range' that the Cinnamon roast brought out.
A profile can make a world of difference in the cup!
Les, thanks again for suggesting I use the profile on the Guat and not the
Kenyan!

I have just enough Blue Quetzal Bourbon left to get a little dangerous!
I will go out in an hour or so ands try a cinnamon roast on this beauty.

This is a fine coffee.  I have tried it at cinnamon and a few cracks into
second and it pleases at either roast.  AND if you have enough left you
should try a 50-50 mix of light and darker roast.  Wonderful!!

Blue Quetzal was one of the nicest Guats from last year, and we will 
have it again this year under its TRUE name ... I.e. that of the 
farm: San Jose Ocana. Also, the farm was 2nd place in the Guatemala 
Cup of Excellence! That lot is coming within a week. If you have last 
years, roast it now and make way for new crop! -Tom
