Topic: Roast time ying-yang: roaster type defines slow v. fast ramp time? (2 msgs / 21 lines)
1) From: Brian Kamnetz
I have had roasts where there were very few or no snaps at "first crack".
Had one just last week.

I did 3 roasts in a row with a long slow ramp to first (for me). 14 min or
so. Usually I shoot for 9-11. First crack was very soft, and slower, about
2 min to complete (usually about 90 sec when I roast). Will have to see the
results of this. I totally blew it on the Blue Quetzal (good thing more
coming soon!) 18 min to first or longer - I had a problem managing heat
there. Other 2 roasts were the El Caucho and another costa rican from a
different source. Caucho was complex and intense and amazing on day 1, and
day 2 tasted like tomato paste (I think I may be sick, though, so that
doesn't count).
