Tom wrote last year, "I intend to keep working with Juan Francisco to
maximize the quality of this interesting coffee, and deal with the
logistical problem of getting that cherry processed each night after
picking, so the cup is fruited, not fruity. Hence the ongoing nature of this
work, and "The Juan Francisco Project"." I gently took my last pound of
this coffee a few snaps into second crack. Wow what an amazing cup of
coffee! I almost thought I was drinking a Gesha or Yirg. The slightly
darker roast toned down some of the fruit, but brought out some nice currant
flavors followed by some great chocolate with a very nice after taste. I
hope Tom is working with Juan and will bring us some more of this coffee to
us again next month (It was a year ago in Sept we got the first batch.).
Any word on this years crop Tom? I forgot how good this El Salvador was.
