It's one of the metric units used to measure pressure.
Both a bar & and an atmosphere are units of pressure intended to be normal
pressure at sea level under standard conditions, but since the metric &
English systems of measure assume different standard conditions 1 bar is no=

1 atm.
That said, they're probably close enough to be used interchangeably --
especially if you're trying to read one of those dinky little gauges on mos=
t
espresso machines.

If you don't actually have to change the grind pitch on your grinder
to experience changes in the perceived flavor of repeated espresso
shots, the grinder is possibly making the changes for you. It's
similar to the way an engine would perform with a slack timing chain.
With the variable valve and ignition timing, you'd never be able to
tune it.
The same goes for a grinder that puts out variable sized pieces of
coffee. You could not tune up the brew, but you should enjoy the
random variations of flavor.
