that is what it plugs into....What I have done is put the probe into my
grill for roasting on the RK 
What I need is more probes/couplers for other uses so I cna leave the
probe/coupler in the grilll and have one for checking temps of
water/food on the other grill etc...

The probe plugs into an amplifier that hen plugs into the standard DVM.  Or they plug into a dedicated 
temperature readout device.  The ratings you see deal with the temperature rating of the insulation 
over the themocouple wire.  The wire its self is usually high temp fiberglass and the outer sheath can 
be some other material.  The actual junction responds to a very wide range of temperature.  The trick 
here is to answer the basic question:  do you want to buy a DVM and the temperature measuring 
adapter, or a DVM that directly measures temperature ( temp measuring ckts built in), or a dedicated 
device with limited range that coves your needs today?  SM sells the last item and it will function 
with any type K thermocouple with the little plug.
