Was this the first time you roasted the NMPP coffee, Pat? Remember,
when you're roasting that much coffee, you really have to be on the
ball to get it stopped when you get it into 2nd Crack.
When you first start hearing a few snaps of 2nd, most of the batch is
not there yet. Just "throw them in the snow," and you've beat the
clock.
I just had another Steinway of the Panama Carmen Estate 1.7km -1.8km.
I ground 10 steps coarser (#57, actual) than I've been doing, just
using the hot water as delivered from the TechniVorm, in a Gold mesh
filter.
I left the filter basket valve closed for a minute, while I swirled
the basket to mix the contents. What a glorious bloom/aroma! 19oz
water in 24g, and I switched to my overflow cup for ~0.5oz after
3.5minutes when the stein was full. Jackpot!
I had let 2nd Crack just get started when I quenched it in a colander
in one of the cooling blower's intake venturi. I roasted this 30th Sep
2007- 8 days post roast. Wow. The Panamas like to be snatched from the
jaws of 2nd.
Cheers, Mabuhay -RayO, aka Opa!

Pat,
As Jim pointed out, I too think you can enjoy this roast. That many
divots mean that your gun is too hot. Another way you can cool off a
bit is move the gun further away from the BM.

Jim/Les/Ray,
Thank you very much for your responses. I'm finishing up last weeks
Sumatra Lake Tawar this morning. Will try the NMPP tomorrow.
Ray, Yes I've done two prior roasts. A full pound (like this batch)
back in April and a 1/2 pound this summer. Looking at my notes from
then (I should have done this before this roast), I see I had the same
problem in April, altho not this summer. Only one or two loud cracks,
no rolling first crack and then heavy smoke with a fast, almost
instantly rolling 2nd crack My notes also indicate that after I had
that first batch ... I wanted to buy more ... so I'm now more hopeful
this is going to be a good batch too.
Again, thanks to all of you for the quick replies!

Pat,
Figure out how close to the beans you were holding that heat gun. Next time hold it twice as far away
and things will work much better.
