First thanks for all the congrat's and well wishes.
Second, don't forget this is a joint insanity venture with Bruce! He just
left a bit ago after another 6 hour or so cupping session with a break in
the middle for a darn fantastic Huli-Huli Chicken Wrap that'll be a menu
somewhere soon:-) BTW, Tom has it easy in one respect! After narrowing it
down between two played hell deciding on ONE Sumatra! Tom would simply carry
them both! Distinctly different and both I'd go for in personal stash but a
starting out Roastery Kafe can't offer 70+ different coffees... 
Shop roaster wise yes it will be functional, not just a piece of art.
(Though that too.) However, during the work week since location frequented
by many business people and location near many businesses roasting will not
be done during the day. (Roast discharge aroma may not be pleasing to some
and while legal prefer to be good business neighbors.) Noisy? Depends on
point of view. The rhythm of the beans tumbling may be considered noise to
some, music to others:-) We plan on a posted public invited roasting
schedule during the day on weekends. You want fresh roasted Sumatra
Mandheling? Schedule shows it being roasted Sat. 10 AM, valve bagged and
ready to go by 11! (But if you want El Salvador San Emilio NP won't be ready
until 11:30 and the pre-orders for Panama La Esmerelda Special Gesha ready
at noon...:-) 
FWIW it'll be a couple months until we make the Kafe really our vision.
Won't fully happen until our Grand Re-Opening 'round first of the New Year,
possibly NY Day, more will be revealed. Watch www.mcKonaKoffee.com for
updates. IF it happens to come up for you! Currently just hosting it off
personal comcast webspace. And comcast is doing server upgrades causing
intermitted problems...
