Topic: making lots of coffee - in a percolator? (9 msgs / 321 lines)

hi all,
does anybody have any suggestions what to use when one wants to make
lots of coffee? (50 cups or more)  is there something better then a percolator?

I asked this question before and didn't get many helpful answers.  What I came
up with was to use the large percolator as a vessel only, just to heat the
water.  Then use some muslin bags to make large 'coffee bags' to soak in the
percolator.  I haven't actually tried this yet but I don't know why it
wouldn't work.  If you need a place to order said muslin bags email me off

If I had to do this, it would look something like this:
1) get the biggest drip cone you can find and appropriate filters.  Probably
10 cup.
2) get the fastest water heater you can find.  Either a good electric kettle
or a huge pot on a stovetop
3) get a pyrex measuring cup, big (they have 10 cup ones)
4) get a buncha beans!
5) get a large insulated coffee vessel like an air pot
boil up your water (more than you need, you are going to use it)
take one pyrex full of the water and pour it in the clean airpot.  this will
preheat the internals.  swish it around for 30 sec.   dump
grind your beans for one conefull of coffee (for me, 10 c would be something
like 80-90g)
load your cone with filter and grounds
get a pyrex full of hot water - 10c of coffee worth (you should be keeping
it just off boil, maybe 210ish, it's going to cool to the right temp when
you pull it out and dump it on the grounds)
slowly dispense over your freshly ground, properly rested, somewhat coarsely
ground grounds.  stir as necessary
repeat from Brew: on until you fill your coffee vessel.  this is probably
going to work best if you use a big lobsterpot full of water on the stove,
as it's going to go faster than an electric kettle.  if you use a kettle,
you will wanna boil your water while you're pouring for a brew batch
whenever i have to make a large amount of coffee, 10c or so, I always,
always end up choking the brew aparatus (drip cone).  It probably helps to
grind coarser, as the water has more coffee to wend its way through.
disclaimer: i've never made that much coffee.  i can't drink that much and i
have no friends.

Um, lessee- this isn't the same solution I had earlier, but you can get
really King sized fluted coffee filters at a restaurant supply store and use
them as drip filters in a colander sitting in a large funnel in the mouth of
an airpot. The clear coffee might better satisfy your clientele.
If you have the large coffee pot(s), use one to heat the water to brewing
temperature. Fill the metal coffee basket with coarse ground coffee. Unplug
it and draw off the hot water/coffee in a glass container to be poured over
the grounds until the brew strength is satisfactory.
Or, you could heat the water to boiling and unplug the pot. Plunge your
modified* vegetable strainer containing coarse ground coffee into the pot
until  the coffee has properly steeped, say 3.5 minutes, to taste.
*Use two strainers facing each other to make a coffee ball. To avoid grounds
falling out the seam, bend one so its bowl faces up when you hold the handle
vertically, and the other so the bowl faces down. Bend the tabs so they
interlock when you hold the two handles together. The upper strainer bowl
will prevent coffee from floating away into the pot as it brews.
Maybe I could fabricate a real coffee ball, or maybe they're already
available at the restaurant supply- Nah, I never heard of them. Another
Help this hopes- a mesh covered filter basket- Nylon mesh replaces paper-
could work right off the shelf.
