Interesting question. I roast with a mixing bowl/ strainer, and a
751b, which uses 14.5 amp. IIRC, your 751 draws 20 amps. I have no
problems roasting a pound at a time, and much of that time the nose of
my 751b is a good 6-8 inches from the beans. I shoot for 14 mins, but
could go much faster; I follow a profile attributed to Jim Schulman
that calls for ramps of 10 degrees/min and 30 degrees/min. Bottom line
is that I haven't tried 20 oz, but I think I could do it without a
problem and be well under 20 minutes to C+, where I have been aiming
for the past year or so.
I hope you decide to try 20 oz, and then let us know how it turns out.
