Topic: Hello from Ethiopia (4 msgs / 265 lines)
1) From: Tom & Maria - Sweet Maria's Coffee
Hi All - I have been here is Addis Ababa this week cupping new crop 
coffees from  all regions of Ethiopia. It is very early in the 
season, too early to actually buy any lots. The mid-crop harvest is 
still coming, perhaps starting now in some regions like Limu. So far 
the cup quality has been very high, but it takes some experience to 
cup a coffee that was picked a few weeks before, and hasn't been 
properly rested. They all taste greenish, and have a tight dry 
finish. Still, I anticipate great things, and especially because we 
have a new relation with an exporter who will vacuum pack some very 
small, special lots. That's still a yet-to-be-proven technique to 
preserve quality during shipping from Ethiopia, but as you knwo it 
has worked well for us from Colombia (our COE lots) and Brazil (Our 
Daterra Yellow Bourbon), as well as Australia and some others. So we 
shall see. I think I will have to return in mid-February to cup 
coffee lots that have properly rested in parchment. Anyway, I will be 
working a lot on the Behmor pages when I get back, but from the 
limited emails I have seen things look good, and Josh pre-tested a 
batch before we shipped any, and saw that they performed well and 
were well calibrated. I leave tonite on an ugly 28 hour flight that 
has be transferring at 3 am in Beruit ... groan, then on to frankfurt.
