Here is my method for making coffee ice cream:
Prepare milk/cream sufficient to make one gallon of ice cream.  
Coarsely grind a pound of coffee. Gently pour the milk/cream over the  
coffee, wetting it thoroughly but do not stir. Let it sit in the  
fridge overnight. Then, pour through cheesecloth. Do not squeeze; as  
noted in the AP thread, I believe it releases bitterness. Dissolve  
sugar sufficent to make ice cream- sugar plays an important part in  
the scoopability of the finished product. Enjoy !
The cold extraction is essentially the "toddy" maker method.
