Whoa, been so busy roasting for and at the Kafe almost forgot to roast Our
Christmas coffees! So just finished City+ 438f 14min half pounders of El
Salvador Peaberry "Aida's Grand Reserve" and Panama Esmerelda Gesha that'll
be a tad short rested for Christmas Eve and Christmas morning... Since this
was/is to be my one and only Aida's roast no dialing in profile testing,
simply used my Panama Gesha profile.
Think I'll toss in a half of 06/07 Pearl Estate Kona to finish off the
Yuletide selections. (Pearl was the Kona Cupping Comp' winner last year and
was able to talk Guss out of a couple LPs, been vac' sealed of course:-)
Hmmm, need an Indo' so will make it Flores.

Christmas selections at our house will be:
Panama Esmerelda Gesha
My Quad Blend (Equal parts Yellow Bourbon; Rwanda Bourbon; Sumatra Blue
Batak; and India Tree Dried) this year.
Bali Kintamani Arabica
El Salvador CoE Bella Vista.
It doesn't get much better than the above selection for variety. I wonder
what surprises we are in for next year from Tom! I'll be roasting up some
of the India Anohki for New Years. My daughter will be here and I think it
will be fun to "surprise" her with something unusual.

I am heading outside right now to roast our Christmas coffees:
Bali Kintamani Arabica (Full City+)
Brazil Organic Camocim - Pure Bourbon (City+)
El Salvador - Orange Bourbon Cultivar (City+)
Sweet Maria's Espresso Monkey Blend (Vienna)
I have some of the Gesha left, but the Kenya Ruiru - Oaklands Estate
Peaberry (City+) may find its way into the roaster today. The India
Anohki and India Mallali Estate "Tree-Dried Natural" are slated for
roasting right after Christmas, or maybe Christmas Day, along with the
Panama Auction Lot #2 Mama Cata Gesha.
Merry Christmas!
Eddie
