Pat,
Just a thought ... decorate some Mason Jars ... inexpensive at the
grocery store and can be made festive.
The Zip-Locks will work fine.  You can "roll" the air out of them and
the CO2 will swell them again to some extent.

the impression that you'd do better to fill it to the top with coffee,
to make sure there was little room for O2, then degas a couple of days
after the roast, and you'd be OK.  Any thoughts??
After having given out 20 full jars today, telling people to let them
rest until tuesday... Hope I'm not leading them astray.

I hope it's not a bad concept to have space in the top of [whatever
container], as the recipient uses the contents.
As the fresh roasted beans sit in the jar, they evolve CO2 molecules that
are more dense than O2 and displace it out the top if the lid is not ultra
tight. If the jars are stored and used with the top opening up, the O2 will
all be displaced by CO2. Consider the CO2 like the juice in a jar of
pickles.
If you want a few pickles, do you pick them out or dump them out along with
most of the juice? If you dump out the coffee beans, out goes the CO2 too,
to be replaced by fresh O2.
O2 is a good friend of fresh roasted coffee beans. The liaison yields stale
coffee beans. CO2 fills containers of fresh roast like water fills a
swimming pool or flooded basement. Your favorite guitar will float on top,
just like O2 molecules. The CO2 does nothing to the coffee beans, just
excludes the O2.
