I was waiting for this posting. I knew it would come. The pluses and minuses are
all predictably there. I hope you are beginning to pay your expenses now, that
is the hardest hurdle.
I do not want to trade places with you (job wise) but I do get some of the
benefit you describe when I serve shots or capaccinos here to people who have
never had super quality coffee - the sum total of the bean, the roast, and the
preparation. That glazed look and smile are rewards for my efforts. Unlike you,
I have no idea whether they will seek out this quality for themselves, whereas
you can hope they will return to your shop for more.
I did refer a person in Vancouver WA to your shop. I have an electronics
parts vendor there (US Digital Corp).
When you get your US Roaster, you will need to spend considerable time adjusting
your roasting to be able to mimic the hottop CCR systems you are currently
using.  I have been able to do so with the help of the prototype control system
and software I put on my Probat. I am not roasting on the Probat much as I I am
the only coffee drinker here and also the roaster is outdoors and it has been
between 28 and 48 degrees F here.
