Topic: Tipping and Scorching in Roasting (3 msgs / 57 lines)
1) From: Eddie Dove
What is tipping?
What is scorching?
Are the two different?
If yes, how do the two differ?
Any explication of the characteristics of both and the differences (if
any) between the two would be greatly appreciated.
Respectfully,
Eddie

Tipping is spots from too hot conduction heat from the drum.
Scorching is too high an environmental temp. in the drum.

Hi, Eddie.
A friend sent me this website recently - "Ruling The Roast - II" is
about just these defects. Hope this helps. http://www.bootcoffee.com/articles.htmlAll the articles are an excellent read, though.
