Glad that your shop roaster is finally on its way.  Once you get it set up 
and get the profiles adapted for the different machine, it should make your 
job a little less stressful.  I really can't understand why it took so long. 
(I imagine that you ask the same question)  IIUC you ordered a standard 
model with "regular" options.  By that I mean, you did not ask them to use 
parts that they don't normally use.  I realize that all of their roasters 
are assembled to order, but it seems that the parts should be off the shelf 
for them.  The only thing I can think of is that larger, more profitable 
machines were put ahead, and your machine was assembled when they had extra 
time.  Of course, as you previously mentioned, paying in full up front took 
away all of their incentive to get it done quickly.
It is a good thing that you have had the two Credence Clearwater Revival 
Hottops to use in the meantime. (I wish that I had one) Imagine if you had 
to do all your roasting for the shop on your Rostos.  BTW - did you check 
into the possibility of renting roasting time on someone else's shop 
roaster?
On the food side of the business, any thought about slipping in some BBQ?  I 
know that is another passion of yours.
Anyway, it sounds like you are slowly getting past the speed bumps of 
starting a new business.   I wish you continued success.
