Howdy Sean from another Vancouverite (New Westminster really).
Unfortunately I have no idea where to get the poly filters but I used an
AP daily until I got my new espresso machine. For me I used 28-30 grams
of coffee for 500ml of water total. Of that 500ml about 250 actually
went into the AP. I ground to a little finer than I did for my old, now
unused, drip machine. I followed our host Tom's advice and kept grinding
a little finer and finer every day until it was too hard to push the
plunger. I then backed off a little and stuck with that setting.
I also brew in the AP with water that is between 199 and 201 deg F and
have been exceedingly happy with the result. I was at 49th parallel on
4th a couple of months ago and had an amazing Sidamo off their clover.
I ended up buying a pound of the beans to see if I could replicate the
cup at home. With the above regime I found that it was incredibly close
in flavour. The only difference really was that the coffee comes out of
the clover a little cooler than it does coming out of the AP and the
flavour of this Sidamo didn't really come out until it was a little cooler.
Cheers
