Topic: Oil on the beans? (2 msgs / 28 lines)

The oil on store bought coffee beans is also often a factor of age. Most of
us homeroasters are using our roasts within a week of roasting, but even a
good city+ may start to get oily if left sitting around for a few weeks or
months.
The previous posts are all correct, darker roasts do bring out the oil; but
so does time. Most store coffee is pretty stale by the time you get it.

As you roast darker, the cellular structure inside the bean breaks down, 
leaking oils to the surface.  As the beans age, they also seep oils to the 
surface.
