Topic: Sumatra Blue Batak Tasting (10 msgs / 272 lines)

Two Sumatra Blue Bataks this morning. One FC+ and one C+.
I roasted these yesterday. The first batch I was shooting for a C+, but =
the power went out just as I was about to pull the roast and dump to the =
vac/colander for fast cooling. Turns out the power company was replacing =
a transformer down the street. By the time I got the roast pulled =
manually from the Gene Cafe by carefully rotating the drum by hand and =
dumping to a cake pan and cooling in the snow, it wound up FC+.
Figuring I blew it, I roasted another batch once the power was back on =
to C+.
In both cases, I started with a cold drum; no preheating. Both are good =
coffees
BUT...
The accidental FC+ is awesome! The grind aroma is spicy and exciting, =
the wet aroma in the French Press is strong and pungent. The hot flavor =
in the cup is a big tobacco with a raisin and dried fruit after taste. =
As it cooled the raisin came to the fore in the cup. A very nice full body.
Profile: 465 to end of first, drop to 450 at 15 until end of roast. =
First crack at 14:30
The C+ is not as exciting by comparison. The grind aroma is very much =
the same, spicy and full, but in the cup, the tobacco is very muted with =
a mildly sweet aftertaste, but no raisin or fruit.
Profile: 300 for 5 minutes, 465 to 12 minutes, 471 to end of first, 450 =
to end. First crack at 14:45.\
I suggest taking this bean to FC+. It's a great cuppa!
Now to try them tomorrow after more rest...

I roasted the last of my Blue Bataks on Tuesday night, 3 different roasts.
 I am still experimenting with the different ways of applying heat with the
HG... So I roasted 3 roasts, each 10 oz.1: 1C at 630, 2nd at 915, EOR 945...
FC+
2: 1C at 830, EOR 1215 after 2 snaps of 2C... FC
3: 1C at 1345, EOR at 1720... FC
The 3rd roast I was trying to see how the flavors would be with a much
slower ramp to first.  The 3rd roast just tastes bland.  I've never known
exactly what baked means, but this might be a baked roast.
The other 2 are good, actually the best that I've gotten from the blue
batak... but all the same, my roast of this bean just leaves me
underwhelmed...good coffee, but not amazing.  Tom's notes involve spices,
plum, cardamum... I'm not getting any of that with this bean.  And not a
noticeable amount of body, either.
So more than anything else, I'm noting that I can't hit the roast on this
bean.  And frankly, I'm glad that I'm out, I'll focus my attention on the
Bali, which was pretty tasty a couple of weeks ago.
John, thanks for your notes on the coffee.  And I'm also glad to hear that
your roasts are wonderful.. reminds me that the problem is human error, not
bean error!

My 12# shipment from Sweet Maria's was last seen in Des Moines (just 2 hours
away) as of 5 am this morning.  It should be on my doorstep when I get home
from work tonight (working late -- bummer!).
Think I'll roast a little Blue Batak this evening to see how it comes out.

Well...Harvey DID leave a present for me from Sweet Maria's yesterday.  I
finally got time for two popper roasts right before bed, both the Sumatra
Blue Batak to Full City.  My son grabbed the first batch and made himself a
FP.  Awesome, he says.  I finished the second batch, gave it about 3 minutes
rest, and made myself a FP.  My son was right.  Awesome cup.  Root
characteristics much like other Sumatras, but much smoother.  Tough to
describe the flavors, but they seemed much more refined than the wilder
Sumatras I've had in the past.  A cup to savor.
Brought some beans to work today and the AP cup I just finished was great
too.  Cleaner, a bit more crisp, but still exceptionally smooth and
refined.  Wow.  I'm going to kick myself for only ordering 2#.

OK, since it's lent I'll say it: mea culpa.  I've been bad-mouthing the blue
batak in my mind for months, and have said a couple of hurtful things about
it on this list.  I brewed a pot of FC this morning that had been rested for
9 days, and WOW!  The body was finally there, as was the amazing aftertaste
and some of the brown sugar and chocolate as well.  So I'm sorry that I've
badmouthed the humble blue batak... I finally hit it!
used my HG/BBQ... 1st at 830, EOR at 1215, after 2 pops of 2nd crack.
I roasted another where the end of roast was at 18, used a slower ramp, and
didn't think it was as good as this one... But, live and learn!!!

I'm not surprised the first of the two roasts is the better. I've come =
to learn the Blue B needs a fairly high heat through the entire roast. =
In fact, I treat most Sumatras this way with tweaks as I learn each bean.
I'm glad you enjoyed it. It's a favorite of mine. Well, frankly, the =
coffee in my cup at any particular moment is a favorite.

favorite."  I like that.  My wife always asks me, "What are we drinking
today?  Today was a left-over blend of three beans.  Columbia, Yirgacheffe,
and some Bali to finish off the amount needed for a pot of TV brewed
coffee.  It was real good.  It wasn't a blend that I would normally make,
but the Columbia gave it a special brightness and the Yig some fruit and
body and the Bali a nice complexity.  Right now I am drinking  a lot of
roasting experiments and poor "Bueford" (the name of my USRC half kilo
roaster) is feeling ignored.  Too many tamper orders to do, before I play
with the roaster some more.  I do need to send my daughter 4 pounds this
weekend, so I will be roasting on Saturday.  Lets not praise up the Blue
Batak too much, I want some to be left when I order again.  It is one of my
favorites.
