Topic: sampler arrived and Gene Cafe . Kenya first. Why (4 msgs / 117 lines)
1) From: Ken Knott
Interesting... for my first roast with my Gene Cafe I was facing the same d=
ilemma. I decided to draw straws so to speak and cut up little numbers cor=
responding to the particular coffee's.. the winner was in fact Kenya.
Why would you suggest not to go with Kenya first?
I enjoyed it quite a bit, though I am still having a hell of time discernin=
g first crack/second crack or any crack... =
But it was delicious either way... I think I ended up into Full City somew=
here...
I roasted at 465 for 16 minutes....
Thanks,
Ken

I have found them a bit more complex to roast - and a bit easier to ruin.

I'm in your court on this one Ken, the Kenyans are known for being a very h=
aerty bean and when I started I ruined some Yirg because I took it to a FC+
But learned later that a Kenya being such heary bean would have handeled th=
e roast in fine fashion....
IMHO and as ALWAYS YMMV

If you will print out the pictures that Tom has on the SM site of bean
color and not go darker than the picture looks you will be OK. It takes
a while to find the cracks. Sometimes there are lots closely spaced and
most of the time there are only a couple that are widely spaced. theer
are sound engineering reasons for this but initially going by color and
only listening for cracks is going to make this a lot simpler.
If you want FC then stop at C+ color...
