Have you heard that Stumptown is branching out more (they have always 
sold coffee to wholesale customers)?  They are currently supplying, 
setting up and "training" staff at the PC Markets of Choice.  I put 
training back there in quotes as so far it has not been the Stumptown 
experience I had hoped for.  They are using grinders that auto-dose 
and tamp (although they can adjust the grind).  They are taught when 
to pull the shot (when it blondes).  Good thing there at least.  But 
it seems little else.  Hell, my double was pulled into two cups, and 
then poured into a third and handed to me.  That was a first.
Regardless of that, there shots have been all over the board.  Mike 
(or anyone), can you confirm for me there stock equipment is a 
HX?  It acts like it.  I have had a handful of conversations (and 
shots) from one "barista" (she is trying) but she was 100% in the 
dark on temperature control "oh, it just keeps it at the perfect 
temperature".  She pulled me a  shot.  I watched her pull the empty 
dirty PF from the group, grind and dose and flush "to clean the head" 
- probably 20 seconds.  Sour as could be and not the Hairbender of my 
memory.  She asked how it was so I truly but delicately told here.  I 
recommended flushed the group clean after every shot so it was ready, 
not before so coffee didn't have a chance to bake on.  She seemed 
receptive.  I had her flush the head clean, grind, dose and this time 
give it a 5 second flush (instead of 15-30) (I was guessing here as I 
was on the counter side and couldn't tell anything) and the shot was 
much more up to par.  She tasted it also and concurred.  We'll see if 
it makes a difference.
Mind you, I adore Stumptown, but this kind of lack of training is 
only going to hurt them.  Now that I write this out, I really just 
need to go off and call and/or write Stumptown.  IMO, they expanded 
without proper infrastructure and this isn't going to help their name or rep.

I haven't been to a Stumptown location in a spell. I've heard various
reports from people that parallel yours though, Stumptown isn't what it used
to be. Sometimes great, sometimes no. There are independents that do a much
more consistent high quality job pulling Stumptown's Hairbender than
Stumptown does these days. =
Don't really have time to keep track of what Stumptown is doing expansion
wise. I've heard they're doing "something" growth wise on the East Coast
even but not sure exactly what. I hope they don't turn into another Mermaid
focusing too much on the $ over quality...
Stumptown café's themselves in Portland do not use HX machines, use very
high end DB's. Don't have a clue about "PC Markets of Choice" equipment.
Grinder sounds like a La Marzocco Swift. Not a slouch of a grinder. Did it
have dual hoppers on the grinder? (a feature of the Swift)

Bear with me - what is a DB?  Yes, the grinder is =
a La Marzocco Swift, although I didn't notice if =
it had two hoppers.  Very well may have.  The =
espresso machines I saw were all dual head La Marzoccos.
I understand about not keep tract of =
Stumptown.  Just like I have no clue of other =

to bother seeing what others are doing.
