Topic: another roasted bean storage question and degassing... (20 lines)

All,
 
       So I took one of those degassing valves apart because I wanted to copy them so to speak.  Really still not sure how they work.  Anyone?  It almost seems like you could just poke the tiniest hole in a lid/bag and have the same results.  
 
       I'm interested in using the valved bags to see if it makes a difference in storing roasted beans.  I seem to get this funk smell from keeping them sealed in mason jars(I use the plastic lids, not the metal rings/bands).
 
       I was contemplating putting a pin hole in a plastic lid but not really sure how to test it.
 
       How long do you de-gass your beans before sealing them tightly in a container?
