Hi,
I haven't done a lot of roasts yet (still < 30) in my Gene Cafe, but  
I've recognized some trends. Generally speaking, First Crack lasts  
about 2 minutes. And Second Crack starts approximately 4.5 minutes  
after the start of FC. There have been variations in the roasts I've  
done, but it's been pretty consistent. Would it be fair to say, given  
this info that based on the time from the start of first crack?
0:00 Start of FC
2:15 City
3:00 City+
3:45 Full City
4:30 Full City+
5:15 Vienna
6:00 French
The temperatures and time that Tom gives for the roast stages in his  
chart are pretty linear during this stage of the roast. His times are  
different, but it would seem to make sense that it would still be  
somewhat linear.

Hey Peter,
looks pretty good.  One thought, I don't think that a bean would be in City
for that long...  obviously depends how much heat is going to the beans
during first... anyway, I would skew it maybe 1:30 city, 3 full city...
something like that, but that's my experience with a freshie and a HG.
 obviously, YMMV...  sounds like you're starting to get that GC really
figured out!!!
