Topic: Aged Sumatra...how much rest? (7 msgs / 158 lines)
1) From: Sean Cary
Got the SC of the SC/TO fixed (thanks Ron - bent washer was the final fix)
and roasted a pound of the Aged Sumatra to a rolling 2nd crack...
How many days rest?  I trashed the first pound of this - and have never had
it before.  Hoping that the crappy roast it received was the reason it
tasted...like crap.
Still have the Panama 1800+ that I roasted Saturday...that is amazing
coffee...always, so I have a few days before I need to get into the Sumtra.

I had a cup this evening that I roasted last Sunday and it was quite
nice; good chocolate.  I think I cupped this along with the Monsooned
Malabar and Monsooned Java at 5 days and they were all quite nice and
distinctly different.  I did like the drying finish of the Aged
Sumatra Mandheling '04 Crop.

Aged Sumatra is another one I do not really like by itself. Love it in  
a blend, but as a single origin cup, not a good one to my taste.

Aged Sumatra 'can' make a quite good Single Origin smoked dark chocolate
shot!  
How much rest? About a week for shots or it's usually too edgey.

the aged sumatra CAN BE a funky bean that takes a while to "get the right robust taste."
I would let this go for a full on full city plus, plus.
I would try it right away and every other day after that; 10 plus days is not unusual for this bean to rest. Many folks think that if you keep your fresh roasted over a few days without using it, it's crap. Not so Sean.
Give this coffee more rest and I think you may find the same gem many of us have.

Ginny,
We've had our differences in the past, but let me say your post was "spot
on". Coffee can often be too fresh to be at it's best. I get real nervous
when the next batch of our Ohana blend is coming up to hit the grinder
before 7 or 8 days. Like now, only 'bout 5&1/2# of 3/5 batch left so the
3/12 batch may hit the grinder late tomorrow scant 6 days rest! Goofed my
roast timing...

thanks Mike; this is one coffee I really like. The old gotta be 2 or 3 days old then toss is not true.
