Can you elaborate on your roast, method and timings. FC+ doesn't say much,
could be reached in 4min, 12min, 25min... While a traditional wet processed
Yirg' IS all about florals and citrus, it should not be harsh. (At least
none sourced from Sweet Maria's.) Sounds like too fast a roast. Neither
roasting lighter or darker will compensate for roasting too fast.

I was mistaken - it was what I believe to be City+.  Don't know why it came
out as FC+ in my post, but the color of the beans is somewhere between milk
chocolate and dark chocolate, with a little sheen but no real oil.
The beans were roasted in a FreshRoast II.  I roasted two batches.  First
crack was at 3:30 for both.  I stopped the first at 5:00 and the second at
5:30.  I don't know why the second one took thirty seconds longer than the
first to reach the same approximate color.
If a too fast roast will cause that problem, that is probably the culprit;
perhaps I can rectify that problem when my Behmor arrives.  When it does, I
will roast up some more.  Does anyone have a Behmor profile for this bean
that they would/could recommend?
