Heating and then boiling plain tap water or bottled water  will result 
in a chemical change depending on the minerals dissolved in the water. 
The taste will change.  The dissolved gas may react with some of the 
minerals before the remainder out gases.  Obtain some monobed 
demineralized water and heat, boil and cool to same temp - no change in 
taste.  It makes great coffee though.  Its all of the other stuff in the 
water that causes the change in taste when you heat and cool it.  It 
also determines how good of a solvent it is.

Ok I'll bite...we haven't had this discussion lately
Water- What is the best for making coffee?
do you boil then cool to get to the correct temp or Never boil pull off 
and use on the temp rise to boil?
Inquiring minds want to know....C'mon you water snobs lets hear your 
case I know we have a lot of new people on the list and i think it is 
time to bring up this discussion again...

If you can tell the difference, then you really need to heed the call to be 
a coffee taster somewhere.  Boiling it at least would kill any random germs 
that might infect your pot of brew.
