Topic: Anokhi (14 msgs / 368 lines)
1) From: Dean De Crisce
Just roasted 1/2 lb of Anokhi in the Behmor. P3 at 1/2 pound with 90 second added at the end. First crack started with about 2 min remaining and that is why I added the extra 90 second. First crack was slow and prolonged. Right as it finished, I heard additional cracking that I'm not sure if it was more first crack or second crack. I thought it was difficult to tell. Smelled like an odd blueberry.
Any input about how it roasted would be appreciated. I hope I didn't blow it and take it into second crack.

Some additional info: the bean cover is mostly smooth like city+ and beyond...but some beans still were partially covered with chaff. There are also multiple different colors. I am at a loss to determine whether this is a city, city + or full city.

It sounds good Dean - just be aware of the huge effect a long resting
period after roasting has on the flavors of this cup. it's fun to
taste it fresh, just to acknowledge how unusual the coffee is, but
after 5 days it's an intense cup laced with anise, with some
lessening of the blueberry notes, and less of the hidey, leathery
flavors too. Anohki means "unique " and it definitely is...

My approach to Anokhi coffee was the same as yours and I have let it
rest, to date, for five days then brewed it with an Aeropress. This is
certainly different but I like it. One other taster did not. Also, in
my experience, 1st crack can be a vague, spun out event with other
coffees as well. I aim for the end of that activity and hit "Cool" for
the lighter roasts but continuing on for the first sound of 2nd crack
for darker. With the Behmor, for me, this means using the 1 lb button
(plus whatever profile setting) for anything from 8-10 oz. In my set up
a full pound with an accurate scale will barely get into 1st crack even
with all the additional seconds. Bernard C. Gerrard

I just tried a SO espresso of the Anokhi at 30 hrs rest (city+). It literally tasted like poop sprinkled with blueberries. I am happy to have had the experience...but I almost gagged. I actually went to the Rocky and used some Grindz to clean it out...and then took it apart to vacuum it out. The taste and smell is so strong I was afraid it would be like flavored coffee and would flavor future grinded coffee.
I put the Anokhi away and will try it Fri and next Wed after 4 and 9 days rest.
I am now doing an emergency 7 am roast of New Guinea. I usually focus on one bean at a time...every 3-4 days. The Anokhi will not be for regular use !!
Cheers.

A friend gave me some - I've been afraid to roast it! Someone did nail down
the roast & posted it. When I have the time, I'll check the archives - but
maybe they can post it again(?)

Interesting! I don't think I've ever tasted poop. I roasted some
Ahokhi over the weekend and plan to try it later this week.

Using the Vicki Smith "alberta method" she would roast some IMV then have
some geese poop on it... maybe a bit more trouble than the anokhi... hard to
say. also, could we have some more specificity on species? goose, human,
cow, pig? Is that on the SCAA cupping chart?bill

I guess neither have I, but it tasted like poop smells...specifically cow poop.

Dean-
How did you roast it for espresso? If you roast to a city or a city+ the
"barnyard" flavors you talk about are not there. Also what roasting
method? If you use the Behmor (or any drum roaster) this also helps
neutralize the offensive flavors. Certainly rest will also help make it
less extreme, but I had some straight out of the roaster (at a light
city roast) that had almost no barnyard and overwhelming blueberries.
And I roasted two batches in a popcorn popper that were also fine,
roasted to city+.
My guess is that you did a darker roast for an espresso-which was not a
good idea! (I don't think it is a coffee for espresso) I do pourover or
French Press, and I am pretty sure that is the best match for Anoki. I
have served it prepared in this way-light roast in the Behmor, brewed in
aFrench Press- to all sorts of people, including people who do not like
"funky" coffees and they have thought it was spectacular.

I roasted it city to city+ on the behmor...8 oz at P3 1/2 lb at full time plus ninety seconds.
I generally take all my coffee at city plus and drink it almost soley as espresso. Perhaps the wait and a french press will be less intense...i'll report on it tomorrow. Thanks.
