1) From: Bill
Kenya Gethumbwini Peaberry. Just finished what I roasted in the freshie on
Wednesday. After this post, I'm off to the patio to roast about 4 batches.
I'm thinking Costa Rica Tono Miel, Aged Sumatra, Flores, and another
Flores.
The Kenya PB is better younger. It definitely mellows out as it rests, but
I don't prefer that. I liked it when it was ridiculously bright and tasted
like candy. Now it is definitely mellower and smoother, but not as
aggressive.
So I'm off to roast this morning. I'm excited, it's been 2 weeks!
What's in your cup?

Panama Las Victorias, C/C+. Nice and smooth. This was recommended on this
list, in a thread about Kona-ish coffees. I am very pleased with it, and
it's 1/3 the price of Kona! I have some Kona Purple Mountain resting, which
I will try tomorrow.

I am drinking some Kona Mountain Thunder which I pulled a bit early, I
think (City, tickling City+) and a few days rested. It's quite tasty.
I had a swissgold single cup drip of El Salvador Matatalpa at FC+
this morning, and it was very tasty as well, though I think I prefer
it at City+.

IMV at FC+ (the product of my first chaff fire!)
Still pretty good. The slightest hint of blueberry in the wet aroma, but
tastes of caramel and an earthiness like I've tasted in the Monsooned
Malabar.

I had a cup of the Kona Purple Mountain that I roasted yesterday.
Normally I give coffee a bit more rest than that, but it smelled so
good I had to try some... I roasted it with a slow ramp up in
temperature. I was aiming for a Full City roast but my timing was off
due to the slow temp ramp and it ended up closer to City+. Still an
amazing cup of Kona. Kona is probably my favorite coffee and this is a
really good one.

I am enjoying the Yemen Mokha Mattari on about 54 hours rest. Amazing
degassing as it brewed in the TV. A very nice clean cup. It begins with a
bit of grape and a nice wake-up flavor. Rustic and full of awesome
chocolate with a hint of tobacco finishing with a maple syrup sweetness that
is the best in recent memory. This new batch of Yemens that Tom brought in
are awesome.

Les, what do you mean by "amazing degassing"? That even at 54 hours it
still put out a lot of CO2, or do you mean something else? I'm curious...
Didn't roast any yemens today, but will before too long...

Putting out a lot of CO2, about as much as most beans after a 12 hour rest.
I had a very nice head of foam on top of the Swiss Gold.

Today was a blend of my own creation that I call Master Blaster. It is a
Brazilian, 2 Sumatras and a Sulawesi. It still needs a bit of tweaking, but
it is pretty good. I need to add something to give a bit more character.

Actually, Sat. and Sun. as well. Had my trigger-thumb surgery Fri. so
I've been unable to roast. Before I left for KS and Memphis in early
Feb., I roasted a little Sumatra Lintong Blue Batak and split it
between my travel kit and my kitchen for my husband and son. Went to
Costco to pick up a bag of fresh-roasted beans for when they ran out
of homeroast; unfortunately, due to budgetary constraints my local
Costco no longer roasts in-store daily or even weekly. Only whole-bean
non-decaf coffee they had that was less than a month old was a French
Roast Rwanda (in fact, ALL their in-store roasted non-decaf whole bean
was French Roast). I've been doling myself out a little of my own
Blue Batak (ground in a Bodum Antigua) brewed as a one-cup pourover,
alternating with single shots of D'OH! Blend (because of the sutures
in my left hand, can't use an Aeropress, French press or steam milk)
since I returned to Chicago Tues. night. Alas, the French Roast Rwanda
has been getting stuck in the throat of the SM+ and my husband has
been cussing like an Illinois governor trying to get it to work, even
resorting to going across the street for a cup of *$ at $4/pop. So the
day before my surgery, I scored the LAST bag of Seattle Mt. Blend (FC
+) beans at Costco. Hubby nonetheless refused to discard the French
Roast, saying it'd be wasting money to do so (till I pointed out that
he was leaving the house in freezing weather, paying $4/cup for brewed
*$ to avoid throwing away less than $2 worth of beans). Guess it's a
guy thing.
To add insult to injury, my son's little 4-c. Mr. Coffee sprung a leak
in its tank Sat. night and flooded the counter. As a path of least
resistance, we're buying him a Keurig (he doesn't want to brew an
entire Technivorm pot when he wants just a cup or two). At least now
they come with a fill-it-yourself basket for using your own coffee.

Sandy, I hope your thumb is feeling better.
For me, today started with a pot of 2008 IMV at City+ on 8 days rest. I
have never had a coffee smell so good before even grinding. I swear it
smells like candy! I LOVE this coffee! Definitely more strawberry than
blueberry in this year's batch.

Starting today I'm having an Ethiopia fest this week. Idido Misty Valley, DP
Koratie, and Bonko "Black Sun". The IMV and the Bonko were both giving
evidence of blueberry this morning with the Koratie lagging a bit behind.
All were roasted in the Gene Cafe to City/City +.
The week will be a week of comparison at various levels of rest.
I shared some IMV with my heed carpenter this morning and he literally
jumped backward with delight and surprise at the fruit, in particulat the
blueberry.
It doesn't get much better than this.

IMV here also from a 1 lb Behmor roast. Yesterday, same bean brewed
in the Krups Moka brew. I asked my wife to inhale through her mouth
after a swallow and note the taste. She said "Wow chocolate".
