I hadn't heard of simmering in milk or half-milk.  I always use water. 
But...  even more OT, I poach salmon in half milk, half water.  I know it 
sounds awful, but it makes a major difference in the taste/texture.  And by 
poaching I most definitely mean "shimmering" water, not simmering or 
(arghhh) boiling.  Coho can resemble Chinook with this approach.
Doggone it!  I'm getting hungry....
